Fall seems to be the most nostalgic season of the year. It could be because we spend more time inside with family. Or maybe that crisp autumn air reminds us of football games, candles, and plaid blankets. No matter what comes to mind, there’s one fruit (that everyone thinks is a vegetable) that rules the day – PUMPKIN.

If your family is full of pumpkin-lovers and you’re looking for something fun to go with the pumpkin pie this Thanksgiving (we’d never replace the pie, of course), here’s a tasty Pumpkin Cookie recipe that won’t disappoint:

 

Iced Pumpkin Cookies

Cookie Ingredients:

  • 2 ½ c. All Purpose Flour
  • 1 t. Baking Powder
  • 1 t. Baking Soda
  • 2 t. Ground Cinnamon
  • ½ t. Ground Nutmeg
  • ½ t. Ground Cloves
  • ½ t. Salt
  • ½ c. Butter, softened
  • 1 ½ c. White Sugar
  • 1 c. Canned Pumpkin Puree
  • 1 Egg
  • 1 t. Vanilla Extract
  • 2 c. Confectioners Sugar
  • 3 T. Milk
  • 1 T. Melted Butter
  • 1 t. Vanilla Extract

Glaze Ingredients:

  • Confectioners Sugar
  • 1 T. Butter, melted
  • 1 T. Vanilla Extract
  • Milk (as needed to achieve drizzle consistency)

Instructions:

  1. Preheat the oven to 350°F.
  2. Combine the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. Set aside.
  3. In a medium bowl, cream together the ½ c. of butter and sugar. Add pumpkin, egg, and 1 t. Vanilla to mixture. Beat until creamy.
  4. Mix in the dry ingredients.
  5. Drop the dough on a cookie sheet by the tablespoon-ful. Flatten slightly with the top of your finger.
  6. Bake for 15-20 minutes or until golden brown.
  7. Combine glaze ingredients for desired consistency. Drizzle over cooled cookies with a fork.
